Apollo Bagels has opened its ninth location, and its first full-scale bakehouse, inside the Industry City Food Hall. The 5,074-square-foot space at 268 36th Street has a production kitchen and a retail counter. Every Apollo bagel served across New York City now starts here, in Sunset Park.
Built for volume, open to view
Apollo is known for naturally fermented, boiled bagels made fresh every morning. At Industry City, the team bakes about 15,000 bagels a day. They’re packed for overnight delivery to all nine Apollo locations from this one address.
The process is in full view. Through a viewing window, visitors can watch each batch go from fermentation to the kettle to the oven.
“Before Industry City, we were making bagels in spaces that were never designed for the kind of volume we need today,” said Joey Scalabrino, owner of Apollo Bagels.
Why Industry City
Apollo started as a pop-up inside a Williamsburg pizza shop. As it grew, the team chose to stay in Brooklyn rather than move production out of the city. At Industry City, Apollo found what a bakehouse at this scale needs:
Dedicated fermentation space
Expanded cold storage
Heavy floor loads
Freight access
The production kitchen sits right next to the retail counter, in a food hall that thousands of people pass through every day.
Apollo also joins a group of Industry City food makers that produce and sell from the same space, including Li-Lac Chocolates and Colson Patisserie.
“It’s a model we’ve seen work time and again here, and Apollo is the newest example of what’s possible,” said Jim Somoza, Managing Director of Industry City.
